Using pecorino or grana padano instead of the ham would still keep the salty taste but only if it's a type made with veggie rennet.

That was the point. They were traditionally taken by miners into the tim mines in Cornwall and the thick pastry kept the inside ingredients from getting too dirty. Traditionally, the miners often broke a bit off the crust to leave for the spirits that lived in the mines.

Pie crust is typically flaky, buttery, and delicate also has no leavening.
Pizza dough is crusty and a bit chewy and it's a yeast leavened dough.
