Yes and no.
Prof. Farnsworth uses "Sweet Zombie Jesus" as an expletive as opposed to the current time "Sweet Jesus".
He is however never an actual character in the show, not yet anyway.

There is the Chanukah Zombie though, he's the counterpart of Kwanzabot and Robot Santa Claus.
